Why Seafood Works Well with Vermentino

Vermentino is the white grape of the Italian coast, and it tastes like it. Grown within sight of the sea in Sardinia, Liguria and the Tuscan Maremma, it produces wines with a distinct saline streak, a squeeze of lemon and grapefruit, and a faintly bitter almond note on the finish. Those three qualities — salt, citrus, bitterness — are precisely what seafood asks for.
Think about what makes a plate of grilled sardines or a bowl of clams so satisfying: briny sweetness, a hint of iodine, and a richness that needs cutting through. A heavily oaked Chardonnay smothers that. A bone-dry, high-acid white can strip it bare. Vermentino sits in the sweet spot. It is usually picked with modest alcohol, somewhere between 12 and 13.5 per cent, so it refreshes without numbing, and its phenolic grip means it can stand up to oily fish and fried food that would flatten a lighter Pinot Grigio.
The dishes that show Vermentino at its best
If you want to understand the pairing, cook one of these on a Friday night and open a bottle alongside. Any good fishmonger in the UK can supply the ingredients, and most of these take under half an hour.
- Spaghetti alle vongole. The classic test. Clams, garlic, chilli, parsley and a glug of white wine; the salinity in the Vermentino mirrors the clam liquor and the citrus lifts the garlic.
- Fritto misto. Lightly floured squid, prawns and whitebait, fried fast and eaten with lemon. The wine's acidity cuts the oil; its bitter almond edge stops the whole thing feeling heavy.
- Grilled sea bass or bream with olive oil and rosemary. A whole fish on the bone is the simplest and best match. Look for a Vermentino from the Maremma or Bolgheri with a little more texture.
- Bottarga with bread and butter. Grated mullet roe is intensely savoury and salty. Vermentino's freshness keeps it from becoming overwhelming.
- Crab, langoustines and prawns. Sweet shellfish meat loves the grapefruit-and-herb character of a good Sardinian bottle.
- Seafood risotto or a fish soup. Richer, starchier dishes need a Vermentino with a bit more weight — a Riserva or one aged briefly on its lees.
It is not only for fish, either. A young Vermentino with courgette fritters, a bowl of olives, or a plate of pecorino and broad beans makes an excellent aperitivo. But seafood is where it earns its reputation.
Styles to look out for
Not all Vermentino tastes the same, and knowing the differences helps you match the bottle to the plate.
- Gallura, in northern Sardinia. The most precise and mineral style, often with a stony, almost iodine quality. Bone dry and brilliant with raw and lightly cooked seafood.
- Liguria, particularly the Colli di Luni. Leaner, herbier, with more obvious acidity — a natural fit for anchovies, pesto and vegetable-led dishes.
- The Tuscan coast, including the Maremma and Bolgheri. Fuller and rounder, sometimes with a touch of oak or lees ageing. Reach for these with baked fish, risotto and richer sauces.
- Vermentino aged a year or three. The best examples develop honeyed, waxy notes and gain weight. They can handle grilled tuna, monkfish or even roast chicken.
Serving it properly at home
Vermentino is often served too cold, which mutes the aromatics and exaggerates the bitterness. Take it out of the fridge ten to fifteen minutes before pouring, aiming for around 8 to 10°C. A medium-sized glass, not a narrow flute, will let the citrus and herb notes open up.
For food, freshness matters more than age in most cases — a two-year-old entry-level Vermentino is usually more enjoyable than a five-year-old one. If you are buying for a dinner party, a bottle per two people alongside a seafood starter is a sensible rule, and it copes perfectly well with a cheeseboard afterwards.
Travelling the Vermentino coast
Half the pleasure of this grape is where it grows, and both Sardinia and Liguria make rewarding short trips from the UK, with direct flights from several British airports in season.
In Sardinia, base yourself in the Gallura region around Olbia, Arzachena or Santa Teresa di Gallura. The vineyards sit among granite outcrops and cork oaks, and many small producers welcome visitors by appointment. Late spring and early autumn are ideal: warm enough to swim, quiet enough to enjoy the tasting rooms, and cooler than the ferocious August heat. Combine a morning tasting with lunch on the coast — sea urchin, bottarga and a chilled Vermentino is one of the great Italian combinations.
In Liguria, the terraced vineyards above the Cinque Terre and around Luni are steeper and more dramatic. Walking between villages and stopping for anchovies and a glass of local white is the whole point of the region. Book accommodation early: the villages are small and fill quickly.
Wherever you go, ring ahead or check opening hours before travelling to a winery. Many estates are family-run and tastings are by arrangement rather than by walk-in, particularly outside the peak summer weeks.
Choosing a bottle in the UK
Look for the words Vermentino di Gallura or Vermentino di Sardegna on the label for the Sardinian style, and simply Vermentino for Tuscan or Ligurian bottlings. Independent wine merchants and Italian delicatessens tend to carry more interesting examples than supermarkets, though the larger chains now stock decent Sardinian bottles at reasonable prices.
Check the alcohol level, too: anything above 14 per cent will feel heavier with delicate shellfish, while 12 to 13 per cent is the sweet spot for the pairings in this article. Buy a bottle, buy some clams, and see for yourself why this grape has been the coastal cook's favourite for centuries.
